Consider this your official "glossary" of our Kapampangan kitchen—a sneak peek at the rich, slow-cooked, and nostalgic dishes that will soon be hitting our weekend pre-order menus and private al-fresco dinners.

The Salo Spread: Savory Heritage Mains

Our savory menu is an homage to Pampanga, the culinary capital of the Philippines. Expect rich sauces, vibrant colors, and deep, slow-cooked comfort. (Photos to come soon!)

Kare-Kare (Heritage Peanut Stew

The Vibe: Rich, luxurious, and visually stunning.
 

What it is: Melt-in-your-mouth oxtail and tender beef simmered for hours in a thick, savory peanut and annatto broth. It’s accompanied by crisp bok choy, long beans, and eggplant, and is always served with a side of our homemade baguk (shrimp paste) to cut the richness.

Bringhe (Kapampangan Heirloom Paella)

The Vibe: The ultimate celebratory centerpiece.
 

What it is: Often called the "Kapampangan Paella," this dish is a labor of love. We use sweet glutinous rice cooked slowly in rich coconut milk and turmeric, topped with chicken, bell peppers, and boiled eggs. It is traditionally served on a freshly wilted banana leaf.

Bobotu (Kapampangan Tamales)

The Vibe: A rare, artisanal regional delicacy.
 

What it is: Unlike Mexican tamales, Bobotu uses a base of toasted rice flour mixed with rich coconut milk and peanut butter. It is beautifully topped with shredded chicken and hard-boiled egg, carefully wrapped in a banana leaf, and steamed to perfection.

Authentic Kapampangan Sisig 

The Vibe: The undisputed king of Kapampangan cuisine. Smoky, tangy, and unapologetically bold.
 

What it is: We serve this iconic dish strictly the traditional way—no mayonnaise or raw eggs here! We meticulously boil, fire-grill, and finely chop rich cuts of pork, then toss them with crisp onions, fiery chilies, freshly squeezed calamansi, and savory chicken liver for natural creaminess. It is an intoxicating mix of smoky, crunchy, and citrusy flavors that absolutely demands to be eaten with a mountain of warm rice.

The Salo Sweets: Nostalgic Desserts

Classic Sylvanas

The Vibe: The ultimate freezer-door luxury.
 

What it is: Delicate, crispy cashew meringue wafers filled with rich French buttercream and coated in crushed cookie crumbs. They are best enjoyed perfectly chilled!

Chocolate Crinkles

The Vibe: A chocolate lover’s snowy dream.
 

What it is: Imagine a fudgy, rich brownie transformed into a soft-baked cookie. These deep cocoa treats are rolled in a generous coating of powdered sugar before baking, creating a beautiful "crackle" effect that reveals the dark, chewy center. A childhood bakery staple that is impossible to eat just one of.

Pandan Chiffon Cake

The Vibe: Like eating a fragrant, tropical cloud.
 

What it is: This is the ultimate light-as-air dessert. Our chiffon cake is naturally infused with the aromatic, grassy-sweet essence of real Pandan leaves, giving it a stunning emerald hue and a flavor that sits perfectly between vanilla and coconut. It’s delicate, moist, and the perfect "light" finish after a savory Kapampangan feast.

Ube Brownies with Macapuno

The Vibe: The vibrant, fudgy evolution of a classic.
 

What it is: A modern Salo favorite. We’ve reimagined the classic brownie using the earthy, nutty sweetness of real purple yam (Ube). To elevate the texture and flavor, we fold in ribbons of macapuno—sweet, velvety sport coconut strings—creating a dense, chewy, and visually striking treat that bridges the gap between traditional Filipino ingredients and modern cravings.

Yema Sugar Cookies

The Vibe: Your favorite candy, reincarnated.
 

What it is: We took the rich, sweet, egg-yolk custard candy we all loved as kids and baked its exact flavor profile into a soft, chewy, modern sugar cookie.
