The Salo Spread: Savory Heritage Mains
Our savory menu is an homage to Pampanga, the culinary capital of the Philippines. Expect rich sauces, vibrant colors, and deep, slow-cooked comfort. (Photos to come soon!)
Kare-Kare (Heritage Peanut Stew)
The Vibe: Rich, luxurious, and visually stunning.
What it is: Melt-in-your-mouth oxtail and tender beef simmered for hours in a thick, savory peanut and annatto broth. It’s accompanied by crisp bok choy, long beans, and eggplant, and is always served with a side of our homemade baguk (shrimp paste) to cut the richness.
Bringhe (Kapampangan Heirloom Paella)
The Vibe: The ultimate celebratory centerpiece.
What it is: Often called the "Kapampangan Paella," this dish is a labor of love. We use sweet glutinous rice cooked slowly in rich coconut milk and turmeric, topped with chicken, bell peppers, and boiled eggs. It is traditionally served on a freshly wilted banana leaf.
Bobotu (Kapampangan Tamales)
The Vibe: A rare, artisanal regional delicacy.
What it is: Unlike Mexican tamales, Bobotu uses a base of toasted rice flour mixed with rich coconut milk and peanut butter. It is beautifully topped with shredded chicken and hard-boiled egg, carefully wrapped in a banana leaf, and steamed to perfection.
Authentic Kapampangan Sisig
The Vibe: The undisputed king of Kapampangan cuisine. Smoky, tangy, and unapologetically bold.
What it is: We serve this iconic dish strictly the traditional way—no mayonnaise or raw eggs here! We meticulously boil, fire-grill, and finely chop rich cuts of pork, then toss them with crisp onions, fiery chilies, freshly squeezed calamansi, and savory chicken liver for natural creaminess. It is an intoxicating mix of smoky, crunchy, and citrusy flavors that absolutely demands to be eaten with a mountain of warm rice.
Pork Longanisa
The Vibe: Sweet, garlicky, and a little addictive — the breakfast sausage that Pampanga made famous.
What it is: Hand-formed links of ground pork cured with garlic, sugar, and a touch of vinegar for that signature Kapampangan sweetness with a tangy back-bite. Pan-fried until the casing crisps and caramelizes at the edges, releasing a garlic aroma that pulls everyone to the table. Best paired with a fried egg and garlic rice.
Pindang (Pork Tocino)
The Vibe: Sunday-morning comfort, sweet and caramelized in every bite.
What it is: Pork slices marinated for days in a sweet-savory cure of sugar, garlic, and spices until deeply pink and tender. Pan-seared low and slow so the sugars caramelize into a sticky, slightly charred glaze without drying out the meat. Rich, sweet, and built for rice.
Filipino BBQ
The Vibe: Smoky, sweet, and a little sticky — the kind everyone reaches for first.
What it is: Marinated in a classic blend of banana ketchup, soy sauce, calamansi, and garlic, then threaded and char-grilled over open flame until the edges caramelize and blister. Basted while grilling for that glossy, sticky-sweet finish with a smoky depth underneath. Simple, nostalgic, and impossible to eat with just one bite.
Pancit Palabok
The Vibe: Bold orange, rich, and loaded with texture in every forkful.
What it is: Rice noodles bathed in a thick shrimp-and-annatto sauce, layered with sautéed pork, plump shrimp, crushed chicharon, hard-boiled egg, and a scatter of scallions. Every bite hits a different note — savory sauce, crunchy pork rind, briny shrimp — all tied together by that signature orange-red gravy.
Pancit Bihon
The Vibe: Everyday comfort — savory, homey, and endlessly satisfying.
What it is: Thin rice vermicelli stir-fried with a savory soy-and-broth base, tossed with strips of pork or chicken, cabbage, carrots, and snow peas. Each strand soaks up the sauce without turning mushy, finished with a squeeze of calamansi for brightness. The kind of dish that shows up at every celebration for a reason.
Tid-Tad (Dinuguan)
The Vibe: Rustic, bold, and rooted in Pampanga's countryside tradition.
What it is: A Kapampangan specialty from Magalang, this is pork simmered slowly in its own rich blood-based sauce with vinegar, garlic, and chili until deeply savory and slightly tangy. Earthier and spicier than a typical dinuguan, with tender chunks of pork swimming in a thick, dark gravy. Not for the faint of heart — but deeply craveable for those who grew up on it.
Rellenong Bangus
The Vibe: A showstopper — festive, labor-intensive, and worth every bite.
What it is: A whole milkfish, carefully deboned and its flesh flaked out, sautéed with tomatoes, onions, raisins, and carrots, then stuffed back into its own skin and fried until golden. Slice into it and you get a savory-sweet filling wrapped in crisp skin, with none of the bones to worry about. A centerpiece dish that says "special occasion."
Sisig Pusu
The Vibe: A lighter, veggie-forward twist on classic sisig, with all the smoky, tangy flavor you love.
What it is: Tender banana heart (puso ng saging), boiled until soft and finely chopped, then sautéed with bits of savory pork, onions, chilies, and a squeeze of calamansi. A softer bite with a subtle earthiness from the banana blossom. Can be made fully plant-based upon request.

Classic Sylvanas
The Vibe: The ultimate freezer-door luxury.
What it is: Delicate, crispy cashew meringue wafers filled with rich French buttercream and coated in crushed cookie crumbs. They are best enjoyed perfectly chilled!
Chocolate Crinkles
The Vibe: A chocolate lover’s snowy dream.
What it is: Imagine a fudgy, rich brownie transformed into a soft-baked cookie. These deep cocoa treats are rolled in a generous coating of powdered sugar before baking, creating a beautiful "crackle" effect that reveals the dark, chewy center. A childhood bakery staple that is impossible to eat just one of.
Pandan Chiffon Cake
The Vibe: Like eating a fragrant, tropical cloud.
What it is: This is the ultimate light-as-air dessert. Our chiffon cake is naturally infused with the aromatic, grassy-sweet essence of real Pandan leaves, giving it a stunning emerald hue and a flavor that sits perfectly between vanilla and coconut. It’s delicate, moist, and the perfect "light" finish after a savory Kapampangan feast.
Ube Brownies with Macapuno
The Vibe: The vibrant, fudgy evolution of a classic.
What it is: A modern Salo favorite. We’ve reimagined the classic brownie using the earthy, nutty sweetness of real purple yam (Ube). To elevate the texture and flavor, we fold in ribbons of macapuno—sweet, velvety sport coconut strings—creating a dense, chewy, and visually striking treat that bridges the gap between traditional Filipino ingredients and modern cravings.
Yema Sugar Cookies
The Vibe: Your favorite candy, reincarnated.
What it is: We took the rich, sweet, egg-yolk custard candy we all loved as kids and baked its exact flavor profile into a soft, chewy, modern sugar cookie.
Taho
The Vibe: Soft, warm, and gently sweet — the street-corner treat that means home.
What it is: Silken tofu so delicate it barely holds its shape, layered with chewy sago pearls and finished with a drizzle of arnibal (dark caramelized sugar syrup). Traditionally served warm in a cup, spoon-ready, with a texture that's part custard, part comfort food. Light, soothing, and the perfect not-too-sweet ending. (Note: This is currently only served cold. But you can heat it up in a cup or bowl when you get home!)
